My Favourite Meal and How It Is Prepared

Everyone has a meal that brings joy and comfort, and for me, that meal is jollof rice with fried plantain and chicken. The delicious aroma, the vibrant colour, and the irresistible taste make it my all-time favourite. It is a dish that not only satisfies hunger but also brings people together during celebrations and special occasions.

The preparation of jollof rice requires patience, care, and skill. First, all the necessary ingredients must be gathered. These include rice, fresh tomatoes, tomato paste, pepper, onions, vegetable oil, seasoning cubes, salt, curry, thyme, and bay leaves. For extra flavour, some people add vegetables such as carrots and green beans, while fried plantains and grilled chicken often complete the meal.

The cooking begins with blending the tomatoes, pepper, and onions into a smooth paste. This mixture is then poured into hot vegetable oil and fried until the sour taste disappears, leaving behind a rich, inviting aroma. Tomato paste is added to deepen the colour, and then seasoning cubes, curry, thyme, and bay leaves are introduced to give the sauce its unique taste.

Next, water is added to the sauce, and once it boils, the washed rice is poured in. The rice is stirred gently, the pot covered tightly, and the mixture allowed to cook on low heat. The slow steaming allows the rice to absorb the flavours of the sauce. Occasionally, the lid is lifted to stir and check the texture. Soon, the rice softens, the water dries up, and the grains turn a bright orange-red colour. The kitchen at this point is filled with a mouthwatering fragrance that no one can resist.

While the rice cooks, ripe plantains are peeled, sliced, and fried in hot oil until they turn golden brown. At the same time, the chicken, already marinated with pepper, onions, and seasoning, is fried or grilled until it becomes tender and crispy on the outside. The combination of jollof rice, fried plantain, and chicken is both colourful and appetizing when served on a plate.

The taste of jollof rice is unforgettable. Each spoonful carries a burst of spicy, savoury flavour. The sweetness of the plantain balances the spiciness of the rice, while the chicken adds a rich, meaty taste. It is no wonder this dish is loved by people across West Africa, and in my family, it is the star of every birthday, wedding, or festive gathering.

In conclusion, jollof rice with fried plantain and chicken is more than just food to me—it is a meal that creates happiness, unites families, and represents our rich culture. Whenever I eat it, I am reminded that food is not just about survival but also about enjoyment and togetherness.
